Hakata ramen, the soul food of Fukuoka, is characterized by its rich, cloudy pork bone (tonkotsu) broth and ultra-thin, straight noodles. The roots of tonkotsu ramen lie in Kurume City, from where it spread across various regions of Kyushu—such as Kumamoto with its black garlic oil (mayu), Kagoshima with its chicken broth blend, and Saga with its distinct local style—evolving uniquely in each area. Unique dining customs like ordering your preferred noodle firmness (such as "kata") and adding extra noodles to your leftover broth ("kaedama") also originated in Fukuoka. Ramen is a true symbol of a food culture deeply intertwined with the climate and spirit of Kyushu.

Hakata ramen features ultra-thin, straight noodles served in a rich, cloudy pork bone broth. Because these thin noodles stretch and get soggy quickly, it is standard practice to specify your preferred firmness when ordering, with "barikata" (very firm) and "kata" (firm) being the most popular choices.

Additionally, instead of ordering a large portion from the start, there is a unique culture called "kaedama," where you order a noodle refill while keeping your remaining broth. The smoothest way to do this is to mindfully leave enough soup in your bowl and request a refill with your preferred firmness just before finishing your current noodles.

Tables are stocked with condiments like pickled red ginger, spicy mustard greens (takana), sesame seeds, and garlic.
